Shakshuka: A Quick & Easy Recipe

A new year, a fresh start. I don’t know about you, but after a wealth of indulgence over the festive period, I’m in dire need of some vegetables and this is the perfect recipe to kickstart the year! Shakshuka (shak·shou·ka) is a delicious dish of North African origin consisting of eggs poached in a spicy tomato sauce with peppers and onion.

Discovering this recipe has been a game-changer for breakfast and lunch options. It’s super easy, quick to make, and a great way to incorporate more veg in your life. Plus, if you batch make the tomato sauce, you can reheat it and add the eggs when you need it for delicious shakshuka ready in minutes.

Serves 2 

Prep time: 5 minutes

Cook time: 25 – 30 minutes

Total time: 30 – 35 minutes

Ingredients 

1 tsp olive oil

1 onion, diced

2 cloves of garlic, crushed

1 pepper, diced

1 carrot, diced

½ tsp chilli flakes

1 tsp dried thyme 

1 tsp mixed herbs

A tin of chopped tomatoes

Salt & pepper

4 eggs

To Serve

50g feta

Sourdough

Smashed Avocado

Method

Firstly, chop up all the vegetables into small diced pieces, ready to be used.

Place the oil into a non-stick frying pan and place on medium heat. Add the onions and allow to sweat for 5 minutes until slightly softened. Next, add the crushed garlic and stir. 

Add the carrot, pepper and any other vegetables you like, along with the chilli flakes, thyme and mixed herbs. Stir well and then add the chopped tomatoes and stir again. 

Allow to simmer for 10 – 15 minutes until fragrant and vegetables have softened. 

Use the spatula to make 4 indents in the tomato mixture and carefully crack an egg into each indent. Place the lid on top of the pan and cook for 5 – 7 minutes. When the whites of the eggs have firmed and the top of the yolks are lightly covered with a white film, they’re cooked.

Spoon the tomato baked eggs into a bowl, sprinkle with feta and serve with sourdough and avocado for an extremely millennial breakfast.
