Easy Victoria Sponge with Buttercream
In my final recipe of 2021, I’ve opted for a classic. This Victoria sponge cake is one that just can’t go wrong. Safe to say after a week of Christmas food, no more cake is required in my house. However, sometimes you just need a slice and this sponge is light, fluffy and layered with buttercream and sweet raspberry jam. If you’re looking to start your baking journey (perhaps it’s one of your new year resolutions), this recipe is the perfect way to start. A Victoria sponge cake is easy and simple to make and the foundation to most cake recipes. Once you’ve nailed this recipe you can easily play…

How to Ice Your Christmas Cake
When it comes to cake, no cake is complete without icing. With such a full-bodied, or in my case alcohol heavy, Christmas cake to ice sometimes simple is best. This year, I baked two Christmas cakes; one traditional and one Scottish Whisky Dundee Cake. I’ve been “feeding” them over several weeks and it’s safe to say they’re well fed! With it nearing Christmas, they’re ready to be iced. I’ve opted for two types of icing and always favouring an easy option, I’ve chosen to glaze one and use ready-rolled icing for the other. If you like quick and easy steps to ice your Christmas cake, this is the guide for…

Christmas Pudding Double Chocolate Cookies
December is here and the festive season has arrived! Once again I can only question how has the year flown by so quickly?! Before we know it it’ll be 2022 and time to attempt those new year’s resolutions again. But for now, it’s time to indulge and these double chocolate cookies are the perfect way to do so. Crunchy on the outside, soft in the centre and deliciously sweet throughout. I don’t often bake cookies as they’re usually easier to buy (and scoff), but this recipe is simple and quick. There’s no resting time and they bake in 12 minutes, so you’ll have a batch of tasty chocolatey delights in…

Best Ever Pumpkin Spice Muffins
I may be a little behind on the pumpkin hype (especially considering we’re halfway through November now), but these Pumpkin Spice Muffins are too good not to share! If you like carrot cake, you’re going to love these. Not only light, fluffy and delicious, but when combined with a healthy dollop of cream cheese icing, you’ll be devouring every last crumb! If you have the time and some leftover pumpkin, you can boil the flesh in a saucepan with some water to use as your pumpkin filling. (Takes about 10 – 15 minutes). However, most large supermarkets tend to stock pumpkin puree in a tin which is much easier to…

Easy Chocolate Birthday Cake with Sprinkles
Last week, I turned 26 – hooray! And it wouldn’t be a birthday without chocolate cake. As the chief baker in the family, it’s my job to create something special for those I love and it’s honestly one of my favourite things to do. I really enjoy creating something with the person receiving it in mind. Perhaps using their favourite flavours, textures or food combos as inspiration. However, November 5th is the one day I’m not allowed to bake. One day a year, I’m treated to others baking for me. This year I was spoilt. I received not 1, not 2, but 3 masterful cakes! The first was by my…
